This single-origin medium roast is sourced from coffee growers in two of Mexico's most storied growing regions — Chiapas and Oaxaca — where clay mineral soils and altitudes of 900–1,000 meters produce beans with a warm, inviting character that's hard to find anywhere else. Five varieties — Typica, Criollo, Bourbon, Mundo Novo, and Caturra — are fully washed and sun-dried to produce a clean, nuanced cup.

The flavor profile is the surprise: warm chocolate and cinnamon up front, with a bright green apple finish that keeps things interesting. It's the kind of cup that makes you slow down and pay attention.
